Simplest Weeknight Dumpling Soup

Serves 4

1L quality liquid stock – Veg, Chicken, Beef – Your choice

500ml water

1tbsp light soy sauce

16 frozen dumplings or wontons of choice

1 large carrot julienned

200g snow peas very thinly sliced

Bunch Bok Choy / Choy Sum or other green leaf vegetable

 

Garnish with;

Few drops of sesame oil

Coriander sprigs or leaves

 

Method

Bring stock, water and soy to boil over high heat. Once boiled, add the dumplings or wontons. Bring heat down to simmer.

Simmer, stirring occasionally for 5-8 minutes until heated through and time will be dependent on the size of dumpling/wonton – use the directions as your guide.

Ladle soup into bowls, drizzle with a few drops of sesame oil and add coriander sprigs/leaves.
