Vegan Goji Balls

Ingredients 

¼ cup goji berries

½ cup raw macadamia nuts

½ cup raw almonds

¾ cup desiccated coconut

5 medjool dates, pitted

1 teaspoon vanilla extract

Pinch of salt

2 ½ tablespoons raw cacao powder

Extra desiccated coconut to roll the balls in

Method

In a food processor add all the ingredients except the goji berries and whizz until combined (the nuts should still be a little chunky).

Add the goji berries and pulse until combined and the mixture is sticky, but still don’t let the nuts be ground up completely.

Take small handfuls of the mixture and roll into balls.

Roll the balls in desiccated coconut and place in the freezer to set for 30 minutes.

These balls can then be stored in the freezer, fridge or pantry depending on how firm you like them.
